Here is a breakfast cake recipe that I will be testing this weekend. It sounds absolutely fabulous, and would be absolutely fabulous on a plate beside one of our heritage pastured pork products!
Maple Breakfast Cake
2 1/2 c flour
1/2 t baking soda
2 t baking powder
1 t salt
2 T butter, melted (or vegetable oil)
3/4 c real maple syrup (Severance Maple Products – 413-498-2032)
1 c milk ( or part yogurt!)
1/4 t vanilla
1/2 c walnuts
1. Mix together flour, soda, baking powder and salt and set aside.
2. In a smaller bowl combine and blend remaining ingredients, except nuts. Stir in liquid ingredients into dry. Fold in nuts.
3. Spread batter in a loaf pan. Bake at 350 degrees F for 40-45 minutes. (it might take longer — about 1 hr., I have heard… )
